Ingredients

Here are the ingredients

  • 500 g cherry tomatoes
  • 3 garlic cloves
  • 500 g king prawns
  • 1 jar cooked chickpeas
  • Extra virgin olive oil
  • Pink salt
  • Paprika
  • Fresh cilantro

Utensils

  • Handleless frying pan

Step by step

Method

  1. 1Rinse the chickpeas under cold water and drain them well.
  2. 2Meanwhile, add a drizzle of olive oil to the pot and toss in the whole cherry tomatoes; cover with a lid.
  3. 3Once the tomatoes start to burst and break down, add the minced garlic, paprika to taste, and the chickpeas.
  4. 4Cook for a couple of minutes, stirring well over high heat.
  5. 5Finally, add the thawed king prawns, a pinch of salt, and the finely chopped cilantro. Cover again and let simmer over low heat for 12 min so the prawns release their juices, letting everything cook together and mingle nicely.
  6. 6Done! Time to enjoy this QUICK CHICKPEA AND KING PRAWN STEW

Extras

  1. 1You can add a glass of water once all the ingredients are in if you prefer a brothier stew (that's totally up to your taste).
  2. 2You can start with a quick sofrito using the cherry tomatoes, onion, and bell pepper, and it will turn out even more spectacular.
  3. 3You can use dried chickpeas for this dish, but it won't be a quick stew anymore—cooking times will change significantly and you'll need plenty of water.
