Today we are making courgette and tuna cannelloni, putting a simple and delicious fresh spin on classic cannelloni. We roll the savory filling inside thin courgette ribbons and bake them with a layer of cheese to get that bubbly, golden gratin topping we all love. Let's dig in while they are fresh and hot!

Ingredients

Here are the ingredients you need for this recipe

  • 1 large courgette or 2 small ones
  • 150gr tuna in spring water
  • Tomato sauce with olives
  • High-protein spreadable cheese
  • Garlic powder
  • High-protein grated cheese
  • High-protein powdered cheese

Step by step

Method

  1. 1Preheat the oven to 180ºC.
  2. 2In a bowl, mix the well-drained tuna with the tomato sauce and garlic powder, then set aside.
  3. 3Wash the courgette and slice it into strips about half a centimeter thick using a mandoline.
  4. 4Lay two or three courgette strips slightly overlapping and spread a little of the soft cheese at one end.
  5. 5Add a spoonful of the tuna mixture and roll them up gently.
  6. 6Place the cannelloni roll in an ovenproof baking dish.
  7. 7Repeat the process until you have used up all the filling.
  8. 8Bake for 10 min at 200ºC.
  9. 9After that time, carefully open the oven, sprinkle the grated cheese on top, and bake for another 5 min until melted and nicely browned.
  10. 10Serve with a sprinkle of powdered cheese on top if you like.
  11. 11And that is it! Our COURGETTE AND TUNA CANNELLONI are ready to enjoy.

Notes

  1. 1There is no added salt needed, as the tuna is already naturally savory.
  2. 2If you do not have homemade healthy tomato sauce, a good jarred tomato sauce with no added sugar works perfectly.
  3. 3High-protein cheeses can be replaced with regular low-fat spreadable and grated cheeses.
  4. 4Be very careful with the mandoline—it cuts through veggies and fingers alike, so PLEASE PROTECT YOUR HANDS.
