Today we're making oven-roasted escalivada, a simple Catalan recipe with red peppers and aubergine that we love for its rich flavour and versatility. We roast the vegetables slowly and dress them with extra virgin olive oil for a delicious side dish that you can make ahead of time and serve whenever you fancy.
