Pizzas & savoury bakes
5.0 (1 rating)

Today we're making an express no-rise pizza, perfect for those days when you're craving homemade pizza without waiting around for dough to rise. Made with whole-grain spelt flour and strained yogurt, we get a pliable dough that you can roll out right away. Top it with your favorite ingredients and bake until crisp.

Ingredients

Here are the ingredients you need

  • 300g flour (half whole-grain spelt, half strong bread flour)
  • 3 heaping tablespoons fat-free strained yogurt (Greek-style or skyr)
  • A drizzle of extra virgin olive oil
  • Pink salt
  • 1 teaspoon baker's yeast (optional)
  • 100ml warm water

Toppings

  • Homemade tomato and onion sauce
  • Grated cheese
  • Cooked ham

Step by step

Method

  1. 1Preheat the oven to 200ºC.
  2. 2Add all the ingredients to your stand mixer and knead until you have a smooth, manageable ball of dough.
  3. 3Roll out the pizza base with a little flour and a rolling pin.
  4. 4Place it on parchment paper and par-bake it for 3-4 minutes right on the bottom floor of the oven.
  5. 5Remove and add your toppings (tomato sauce, cheese, and cooked ham).
  6. 6Bake until the cheese is melted and the crust is crisp.

Notes and Variations

  1. 1You can make this dough using just flour and yogurt. Use 5 or 6 tablespoons of strained yogurt and that's it.
  2. 2Feel free to use whatever flour you have on hand or fancy.
  3. 3If the dough feels sticky or dry while kneading, adjust with a little more flour or yogurt as needed. Every flour and yogurt absorbs moisture differently.
  4. 4You can use Greek yogurt, whipped fresh cheese (fromage blanc), or quark. They all work just as well in this recipe.
