Today we are making a Giant Oat and Zucchini Cocoa Pancake, a simple recipe to enjoy a fun, different breakfast packed with flavor. We combine whole rolled oats and zucchini to make a wonderfully moist pancake that cooks slowly in a small frying pan. We finish it off with our favorite toppings and a touch of sweetness from date syrup.

Ingredients

Here are the ingredients you need for this recipe

  • 1/2 large zucchini
  • 3 egg whites
  • 50gr whole rolled oats
  • 2 tbsp unsweetened cocoa powder
  • Vanilla extract
  • Date syrup

Step by step

Method

  1. 1Blend all the ingredients together in a food processor.
  2. 2Pour the batter into a small non-stick frying pan.
  3. 3Cover and cook over low heat.
  4. 4Once it is set, flip it over very carefully and cook the other side.
  5. 5For toppings, I dusted mine with almond flour and pure cacao nibs.
  6. 6All done! Our Giant Oat and Zucchini Cocoa Pancake is ready

Notes

  1. 1The pancake is quite moist, so flip it carefully or it can break apart.
  2. 2It does not taste like zucchini at all; if you do not add sweetener, it will taste bitter from the cocoa.
  3. 3It does not rise, which is why it is best to cook it in a small pan.
  4. 4If you do not have a food processor, grate the zucchini and mix well with the rest of the ingredients until thoroughly combined.
  5. 5You can also pour the batter into a baking dish or muffin tin to make a little cake or muffin.
