We make a light gazpacho with ripe tomatoes, red bell pepper, cucumber, and extra virgin olive oil. We serve it nice and cold, and if you like it completely smooth, strain it so there are no bits left.

Prep: 15 minServes: 4

Ingredients

  • 2 cloves garlic
  • 9 medium ripe tomatoes
  • 1 large red bell pepper
  • 1 medium cucumber
  • 1 medium onion
  • Pink salt
  • A generous splash of extra virgin olive oil
  • Apple cider vinegar to taste

  1. 1Remove the seeds from the bell pepper.

  3. 3Remove the germ from the garlic cloves.
  4. 4Add all the ingredients except the olive oil to a blender and blend until very smooth.

Tips and tricks

Tips

If you prefer your gazpacho completely smooth, pass it through a fine-mesh strainer.

Serve nice and cold.

Use vine-ripened tomatoes that haven't been kept in cold storage.

Don't forget to use a good extra virgin olive oil.

You can use green bell pepper instead, though I personally prefer the sweetness that red bell pepper adds.
