On the hottest days of the year, I always crave something fresh, light, and nourishing. This watermelon gazpacho has become one of my summer staples because it combines the traditional vegetable base with the sweet, refreshing touch of fresh fruit.

Making it takes no more than five minutes: all you need are ripe tomatoes, cucumber, bell pepper, spring onion, and a good chunk of chilled watermelon. It's a healthy, super easy recipe that's perfect to keep ready in the fridge to enjoy whenever you like.
