Today we're making our long-fermentation prosciutto pizza, a homemade recipe using strong bread flour and cooked ham to enjoy the simple joy of baking pizza at home. We let the dough rest for one to two days in the fridge, then top it with our favorites before baking it at high heat.

Ingredients

These are the ingredients

  • 250g strong bread flour
  • 150ml water
  • 5g salt
  • 2,5g fresh yeast

Toppings

  • Healthy tomato sauce with onion
  • Lactose-free shredded cheese
  • 95% cooked ham

Step by step

Method

  1. 1Dissolve the yeast in the room-temperature water.
  2. 2In a bowl, mix the flour with the salt.
  3. 3Add the yeast water and knead until the dough is very smooth.
  4. 4Leave it to rest in a covered bowl until it has grown by at least 30%, then transfer it covered to the fridge for a day or even two.
  5. 5Take it out of the fridge, give it a light knead, shape it into a pizza base, and place it inside the oven with the oven turned off.
  6. 6Once it has doubled in volume, add the toppings: tomato sauce, low-fat cheese, and the cooked ham.
  7. 7Bake in an oven preheated to 250ºC, placing the pizza directly on the oven floor for 8-10 minutes depending on your oven.
