Today we're making a leek pie with ham and goat's cheese, a recipe where we get to enjoy the contrast between a crispy crust and a juicy filling. We combine leeks with wild mushrooms and wrap it all up in thin layers of filo pastry. Let's bring something special to the table without any fuss!

Prep: 20 minCook: 45 minServes: 4

Ingredients

Here are the ingredients you'll need for this recipe

  • 3 large leeks
  • 1 bag frozen mixed wild mushrooms
  • Diced cured ham
  • Egg whites
  • Goat's cheese
  • 1 pack filo pastry

Step by step

Method

  1. 1Place the frozen mushrooms in a frying pan and cook until they release all their water and it reduces down.
  2. 2Meanwhile, wash the leeks, trim off the green tops, and finely chop the white parts.
  3. 3Preheat the oven to 200ºC.
  4. 4Once the mushrooms are nicely softened, add the leeks and cook until tender-crisp (cooked through but not mushy).
  5. 5Add the diced ham and sauté for a couple of minutes.
  6. 6Transfer the mixture to a bowl, pour in enough egg whites to cover, and set aside.
  7. 7In an ovenproof baking dish, assemble the base by laying down a sheet of filo pastry, brushing lightly with water, then adding another sheet slightly offset so the corners don't overlap, repeating until you have 4 layers.
  8. 8Pour the filling into the dish and top with pieces of crumbled goat's cheese.
  9. 9Place a sheet of filo pastry over the top as a lid and seal the edges with the pastry from the base, brushing lightly with water.
  10. 10Bake for 20-25 min at 200ºC.
  11. 11All done! Now we can enjoy our Leek Pie with Ham and Goat's Cheese

Extra notes

  1. 1There is no set amount for the egg whites; just eyeball it so they coat and cover the vegetables.
  2. 2Feel free to season with any spices or herbs you like.
  3. 3Instead of frozen mushrooms, you can use fresh ones; I just happen to like these.
  4. 4I used filo pastry because it's very thin and delicate, but you can try other pastries if you prefer.
  5. 5I don't add any extra salt because the ham is already salty enough, but add some if you like.
