Low-Carb Cheese Bread

Today we're making a low-carb cheese bread with whole oat flour and high-protein spreadable cheese, a simple recipe we love for switching up our breakfasts and afternoon snacks. We whip the egg whites to achieve a wonderfully fluffy texture and finish with a dusting of protein powder on top, adding flavor and sweetness without complicating things in the kitchen.

Prep: 15 minCook: 20 minServes: 4

Ingredients

Here are the ingredients you need

  • 30 g whole oat flour
  • 3 eggs
  • 150 g high-protein spreadable cheese
  • Vanilla extract
  • 4 g baking powder

Topping

  • Protein powder

Step by step

Method

  1. 1Separate the egg whites from the yolks.
  2. 2Beat the egg whites until stiff peaks form.
  3. 3In another bowl, whisk the egg yolks with the spreadable cheese and vanilla extract until smooth and well combined.
  4. 4Fold in the oat flour and baking powder.
  5. 5Preheat the oven to 180ºC.
  6. 6Gently fold the yolk mixture into the whipped whites using slow, delicate, sweeping motions so they stay airy.
  7. 7Drop generous spoonfuls of the batter onto a baking sheet lined with parchment paper.
  8. 8Bake for 15–20 minutes.
  9. 9Once out of the oven, dust the tops with protein powder.
  10. 10Done! Time to enjoy our LOW-CARB CHEESE BREAD.

Notes

  1. 1If you don't have high-protein cheese, any low-fat cream cheese or spreadable cheese will work just as well.
  2. 2You can add sweetener to the batter if you want them sweeter, though I prefer adding the sweetness just through the topping.
  3. 3The dusting on top is protein powder, which looks just like powdered sugar while adding lovely flavor and sweetness.
