Today we're making meatballs with tomato and olives, a homemade recipe using minced chicken breast simmered in a lovely slow-cooked sauce. We combine tomatoes with the savory touch of olives and capers for heaps of flavor. Let's put our aprons on and get cooking!

Prep: 25 minCook: 60 minServes: 5

Ingredients

For the sauce

  • 1.5kg ripe red tomatoes
  • 1 onion
  • Date syrup or sweetener
  • 10 green olives
  • 10 black olives
  • 20 capers
  • 1 splash of white wine
  • Dried parsley
  • Garlic powder

For the meatballs

  • 700g minced chicken breast
  • 2 eggs
  • 3 tablespoons whole oat flour
  • Himalayan pink salt

Step by step

Method

  1. 1Mix the meatball ingredients until well combined, shape into balls, and set aside.
  2. 2Wash and dice the tomatoes, then place them in a pot.
  3. 3Dice the onion and add it to the pot with the tomatoes.
  4. 4Cover with a lid and bring to a boil; once boiling, lower to medium heat and simmer until the liquid released by the tomatoes reduces completely.
  5. 5Next, add the splash of white wine, the capers, and the sliced olives.
  6. 6Season with dried parsley and garlic powder.
  7. 7Finally, once the sauce has cooked down, add sweetener to taste.
  8. 8Sear the meatballs in a skillet until browned on the outside, transfer them into the sauce, and simmer together over low heat for 15-20 minutes.
  9. 9Done! Our meatballs with tomato and olives are ready to enjoy.
