Today we're making a moist orange cake, the kind that brightens up snack time with its citrus aroma and juicy texture. We use a whole orange and extra virgin olive oil for the batter, and finish by soaking it with fresh juice as it cools: a simple trick that leaves it wonderfully moist and full of flavour.

Ingredients

Here are the ingredients you need

  • 2 oranges
  • 250g powdered erythritol
  • 250g plain flour
  • 4 eggs
  • 60ml extra virgin olive oil
  • 1/2 sachet baking powder
  • Diced or flaked almonds

Step by step

Method

  1. 1Mix the erythritol with the flour and baking powder.
  2. 2Blend one whole orange with its peel (just trimming away the tough white pith in the centre) together with the eggs and olive oil.
  3. 3Pour this blended mixture into the bowl with the dry ingredients.
  4. 4Stir everything together well until smooth and free of lumps.
  5. 5Pour into a baking tin. I used a shallow brownie tin. Scatter the almonds over the top.
  6. 6Bake at 190ºC for about 40-45 minutes.
  7. 7Remove from the oven and prick the cake all over using a fork or knife.
  8. 8Finally, squeeze the juice of the second orange all over the top and let it soak in thoroughly while the cake cools.
  9. 9All done! Our MOIST ORANGE CAKE is ready.

Notes

  1. 1My tin is shallow and rectangular. You can use a deep 15cm round tin if you'd like a taller cake, or simply double the quantities for a larger one.
  2. 2You can use regular sugar instead; you will need about 50g less, depending on how sweet you like it.
  3. 3You can also sweeten it with date paste or your preferred sweetener.
