Today we're making a multigrain pizza with zucchini and smoked salmon, a combination we love whenever we want something a little different for homemade pizza night. We make our own dough from scratch and top it with cream cheese, seared zucchini, and smoked salmon. We finish it off with fresh microgreens and a drizzle of olive oil for a bright, fresh touch.

Ingredients

Ingredients you'll need for the dough

  • 360g multigrain flour
  • 7g baker's yeast
  • 1 tsp Himalayan pink salt
  • 2 tbsp extra virgin olive oil
  • 225ml lukewarm water
  • Onion powder to taste

Ingredients you'll need for the toppings

  • Low-fat cream cheese and grated cheese
  • 1/2 zucchini
  • Smoked salmon
  • Aragón black olives
  • Microgreens or sprouts
  • Extra virgin olive oil

Step by step

Method

  1. 1Add all the dough ingredients to a food processor or stand mixer and knead for 6 minutes on speed 3 (if you don't have a mixer, knead by hand).
  2. 2Transfer the dough to your work surface, shape it into a ball, and let it rise for 1 hour.
  3. 3Gently press out the air, divide the dough in two, transfer onto parchment paper, shape into flat rounds, and let rise for another 30 minutes.
  4. 4Add your toppings: spread the cream cheese, sprinkle the grated cheese, then arrange the zucchini (which we cook on the griddle beforehand), smoked salmon, and olives.
  5. 5Bake at 200ºC for about 10-15 minutes.
  6. 6Remove from the oven, top with fresh microgreens, and finish with a drizzle of extra virgin olive oil.
  7. 7All done! Our multigrain pizza with zucchini and smoked salmon is ready to serve.
