Today I am making a homemade zucchini and goat cheese pizza from scratch, a pairing of flavors and textures we absolutely love at home. It has a base of rich tomato sauce, light cheese, and thinly sliced zucchini, topped with creamy goat cheese and toasted pine nuts for a lovely crunch. To make sure the toppings cook evenly, I slice the zucchini thin and spread it out without overlapping too much.

If you are in the mood for a cozy goat cheese pizza to share between two, this is a wonderful pick for a weekend dinner. It is not an express recipe: I like taking my time to make the dough and enjoy the whole baking ritual. Apron on, let's get started!

Equipment

Step by step

Method

  1. 1Add all the dough ingredients to the bowl of your food processor or mixer and knead for 6 minutes on speed 3 (if you do not have one, knead by hand).
  2. 2Transfer the dough to an oiled bag or bowl and let it rise in the fridge for at least 50 minutes.
  3. 3Meanwhile, slice the zucchini very thinly and cook it briefly in a skillet with a drizzle of olive oil and a pinch of salt; set aside.
  4. 4Once rested, roll out the dough on a floured surface into a flat rectangular shape using a rolling pin.
  5. 5Transfer the dough onto a parchment-lined baking sheet and arrange the toppings over it.
  6. 6Bake at 180ºC for 15 minutes, or until the toppings and crust start to turn golden.
  7. 7All done! Time to slice and enjoy our zucchini and goat cheese pizza.

Frequently asked questions

How do I keep the zucchini from making the pizza soggy?

Slice it very thinly and pat the slices dry with paper towels before placing them on the dough. Spread them out without overlapping, and avoid spreading too thick a layer of tomato sauce underneath.

Can I use goat cheese log and swap out the low-fat cheese?

Yes, you can use sliced or crumbled goat cheese log. The low-fat cheese can easily be replaced with well-drained pizza mozzarella, though that will naturally change the richness of the recipe.

Can I freeze this pizza once baked?

Yes, let it cool completely and freeze individual slices well wrapped. To reheat, warm them in the oven until heated through and the crust is crisp again; the zucchini may turn slightly softer, but it will still taste delicious.
