Pan-Seared Banana with Almond Butter

Today I am treating myself to a quick little treat: pan-seared banana with almond butter, a single-serving dessert that takes just 5 minutes. All I need is a banana, a tablespoon of crunchy almond butter, sesame seeds, and raw cacao nibs. It is my go-to whenever I want something sweet without fussing over a complicated recipe.

I sear the banana in the pan and top it with the warmed almond butter, which drizzles so much better over the fruit. The real charm is the contrast between the warm banana and the crunchy bits of almond, sesame, and cacao. I make it right before eating to enjoy that lovely play of temperatures and textures.

Frequently asked questions

Can I use smooth almond butter instead of crunchy?

Yes, use the exact same amount of smooth almond butter. You will miss the chopped almond pieces, but the sesame seeds and cacao nibs will still give you plenty of crunch.

How ripe should the banana be?

Pick a banana that is ripe but still firm: it will be naturally sweet and hold its shape nicely in the pan. If it is too soft, it might break apart when you flip it.

Can this be made ahead of time?

I prefer making it right on the spot, as the texture of the banana changes once it cools down. If you have leftovers, keep them covered in the fridge and eat them the next day; if possible, hold off on the sesame and cacao nibs until serving.
