Today we're baking a peanut butter blondie made with cooked chickpeas and peanut butter—a combination that will truly surprise you because it doesn't taste like chickpeas at all. We sweeten it with date paste and fold in cocoa nibs for a lovely crunch. All we have to do is blend, mix, and bake to enjoy this wholesome homemade treat for our next afternoon snack.

PEANUT BUTTER BLONDIE

Blondies are similar to brownies, with the difference being that they are lighter in color and their flavor changes depending on the ingredients you choose. These little bites are ideal for breakfast or an afternoon snack: vegan, crispy around the edges, with a wonderfully soft texture in the center. It's a fantastic way to eat chickpeas that, paired with rich peanut butter, creates an irresistible combination you'll fall in love with. Have you tried this recipe yet?
