Today we are making our sugar-free panellets with almond flour and date syrup, which adds natural sweetness. We combine two doughs, one made with potato and one with sweet potato, and coat them in our favourite nuts to enjoy these homemade treats we love sharing in autumn.

Ingredients

Here are the ingredients you need

  • 150g boiled potato
  • 150g boiled sweet potato
  • 500g almond flour
  • 250ml date syrup
  • A few drops of vanilla extract

Topping

  • Pine nuts
  • Chopped pistachios
  • Chopped almonds
  • Desiccated coconut
  • Cashews
  • 2/3 eggs

Step by step

Process

  1. 1Grab two bowls.
  2. 2Put the boiled potato in one bowl and the sweet potato in the other.
  3. 3Now add 250g of almond flour, 125ml of date syrup, and a splash of vanilla extract to each bowl.
  4. 4Mix both bowls thoroughly and let the dough rest.
  5. 5In a shallow dish, beat the egg whites.
  6. 6Shape our panellets—some potato, some sweet potato—and place them on a plate. You can give them whatever shape you prefer.
  7. 7Set aside a bit of dough from whichever base you prefer to make coconut panellets: stir in two tablespoons of desiccated coconut, then shape them.
  8. 8Dip all the panellets in the beaten egg whites and add toppings to taste. (Coat the ones with coconut in the dough with coconut on the outside too. For the rest, pick whatever you fancy: pine nuts, almonds, pistachios, etc.).
  9. 9Once coated in nuts, gently brush the tops with beaten egg.
  10. 10Bake at 180ºC for about 10-15 minutes.
  11. 11Let them cool on a wire rack.
  12. 12All done! Now we can enjoy our SUGAR-FREE PANELLETS.
