Ingredients

Here are the ingredients you'll need for this recipe

  • Large mushrooms
  • 1 small handful of textured soy protein
  • Healthy tomato sofrito with olives
  • Chilli garlic sauce
  • Grated protein cheese
  • Cherry tomatoes
  • Powdered protein cheese

Step by step

Method

  1. 1Preheat the oven to 180ºC.
  2. 2Soak the textured soy protein in hot water for 5min.
  3. 3Meanwhile, gently wash and hollow out the mushrooms, then leave them on kitchen paper to drain.
  4. 4Drain the soy protein and mix it with the healthy sofrito and chilli garlic sauce to taste.
  5. 5Next, arrange the mushrooms in an ovenproof dish.
  6. 6Stuff them with grated protein cheese, the soy and sofrito mixture, and top with cherry tomato slices.
  7. 7Bake for 20-25min at 180ºC.
  8. 8Plate up with powdered protein cheese and a little chopped spinach scattered over the top.
  9. 9All done! Now you can tuck into your pizza-style stuffed mushrooms.

Notes

  1. 1Instead of protein cheese, you can use low-fat cheese; it won't have the exact same nutritional profile, but it does the job nicely.
  2. 2The healthy sofrito works wonderfully without olives too.
  3. 3If you don't have an oven, you can microwave them (give them 10min and keep an eye on them).
  4. 4You can skip the textured soy protein or swap it for minced chicken, beef, or whatever you prefer.
  5. 5You can replace the chilli garlic sauce with ground cayenne pepper or garlic powder.
