Cauliflower and Carrot Patties

Vegetables
Be the first to rate it!

If you fancy a cauliflower and carrot omelette, try giving it a twist by baking little patties in the oven instead. These cauliflower and carrot patties use egg, a handful of cheese, and chickpea flour: a straightforward mix to switch up how we enjoy our everyday vegetables. You'll have them ready in 30 minutes, and the amounts make two hearty servings.

I finely chop the cauliflower raw so it blends seamlessly with the carrot; the egg and flour help the patties keep their shape. Then I let the oven turn them golden while I set the table. They make an easy, fuss-free dinner, seasoned with garlic powder and, if you like, a pinch of taco spices. Shall we get to it?

Tips & notes

  1. 1If you chop the cauliflower very finely, it cooks through perfectly in time and won't stay crunchy.
  2. 2You can also cook them in a skillet on the stove instead of baking them.
  3. 3You can substitute 3 egg whites for the 2 eggs; just add 1 extra tablespoon of chickpea flour so they bind well.
  4. 4If pan-frying, cook over low heat with patience so the ingredients cook through without the outside scorching, making them easy to flip.

Frequently asked questions

Can I use a different cheese for these patties?

Yes, you can swap the protein cheese for a handful of any grated cheese that melts nicely. A mature or semi-cured cheese will give them a deeper, richer flavour.

Are these cauliflower and carrot patties gluten-free?

Using chickpea flour keeps them naturally gluten-free. If cooking for someone with celiac disease, make sure your flour, cheese, and spice blends are certified gluten-free to avoid cross-contamination.

How should I store leftovers?

Keep them in an airtight container in the fridge and eat within 3 days. Chill them within two hours of baking and reheat in the oven until piping hot all the way through.
