Today we're making peppers stuffed with minced meat and quinoa, a cozy home-cooked recipe where we enjoy the process without overcomplicating things. We combine minced chicken and turkey with quinoa and our favorite spices to make a wonderfully flavorful filling. Simmered gently in tomato sauce, they make a comforting dish that's perfect to share around the table.

Ingredients

Here are the ingredients you need

  • 5-6 small bell peppers
  • 400g minced chicken and turkey meat
  • 100g quinoa
  • 1 onion
  • 500ml healthy tomato sauce (recipe on my blog www.cocinandomelavida.com)
  • 1 splash of extra virgin olive oil
  • Salt
  • Spices to taste (cumin, oregano, coriander, turmeric, paprika, nutmeg, cayenne pepper, and cinnamon)

Step by step

Method

  1. 1Gently sauté the chopped onion with a drizzle of olive oil.
  2. 2Meanwhile, slice the tops off the peppers and scoop out the seeds.
  3. 3Trim the usable pepper flesh around the tops, dice it, and cook it alongside the onion until soft and tender.
  4. 4In a bowl, combine the minced meat, raw quinoa (thoroughly rinsed and drained), salt, and spices. Once the sautéed vegetables are ready, add them in and mix thoroughly.
  5. 5Fill each pepper with the mixture.
  6. 6In a medium-depth pot, pour in the homemade healthy tomato sauce loosened with a splash of water, and nestle the peppers inside.
  7. 7Spoon a little sauce inside the top of each pepper, then cover with their caps.
  8. 8Cover with a lid and simmer gently on low heat for 40-45 minutes.
  9. 9All done! Time to enjoy our QUINOA AND MEAT STUFFED PEPPERS.
