Today we're making squid with peas, the kind of comforting dish that calls for bringing bread to the table to mop up all that delicious sauce. With gently softened onions and an optional touch of cayenne, you get a simple recipe packed with flavour. We cook it all in one pan, keeping things simple and celebrating real home cooking.

Ingredients

Here are the ingredients you'll need

  • 1,5kgs cleaned squid
  • 500g frozen peas
  • 2 onions
  • Ground cayenne pepper
  • Water
  • Pink salt
  • Extra virgin olive oil

Step by step

Method

  1. 1Cut the squid into pieces and add it to a dry frying pan over medium heat so it releases its water.
  2. 2Drain off the liquid that comes out and set the squid aside on a plate.
  3. 3Finely chop the onions and gently sauté them in the same pan with a good drizzle of olive oil.
  4. 4Add a pinch of salt and cook until the onions turn lovely and golden.
  5. 5Add the squid back into the pan and toss well.
  6. 6Season with ground cayenne to taste and stir in the peas.
  7. 7Finally, pour in two glasses of water, cover with a lid, and let it simmer over medium heat until the liquid has almost completely reduced.
  8. 8Remove the lid, taste and adjust the salt, and cook uncovered for another couple of minutes (you can add a fresh drizzle of olive oil here too).
  9. 9All done! Time to tuck into our SQUID WITH PEAS.

Tips and variations

  1. 1Make sure to clean the squid thoroughly, as it often has sand and grit inside.
  2. 2You can use frozen squid just as easily, and fresh peas work wonderfully too.
  3. 3The ground cayenne is optional; you can also toss in a whole dried chilli and remove it at the end.
  4. 4You can swap the water for vegetable stock or fish stock for extra depth.
