Today we're making a Romanesco gratin with high-protein cheese, a simple recipe where we combine this vegetable with leek and a flavorful tomato and onion sofrito. Ingredients

Here are the ingredients you need for this recipe

  • 1/2 Romanesco
  • 1 Leek
  • Healthy tomato and onion sofrito
  • High-protein cheese
  • Garlic powder
  • Himalayan pink salt (optional)
  • Spicy seasoning (optional)

Step by step

Method

  1. 1Bring a pot of water to a boil on the stove.
  2. 2Meanwhile, cut the romanesco into small florets and add them to the pot.
  3. 3Cook for 5 min, then transfer to a colander and set aside.
  4. 4In a frying pan, gently sauté the leek until soft and tender.
  5. 5Once the leek is well softened, add the well-drained romanesco and season to taste with salt, garlic powder, and your favorite spices. Cook for a couple of minutes so the flavors meld together.
  6. 6Preheat the oven to 200ºC.
  7. 7Transfer the vegetables to an ovenproof dish and spoon a bit of the healthy sofrito over the top.
  8. 8Top generously with high-protein cheese so it melts and browns.
  9. 9Bake at 180ºC for 15-20 min, covering the dish with a sheet of baking paper.
  10. 10After that time, turn on the grill and cook for another 5 min to finish gratinating until golden.
  11. 11Done! Our Romanesco gratin with high-protein cheese is ready to enjoy.

Tips and variations

  1. 1Romanesco is a cross between broccoli and cauliflower, and its flavor sits right between the two.
  2. 2You can make this exact same recipe with broccoli or cauliflower if you don't have romanesco on hand.
  3. 3Season to your liking; I used ground cayenne, garlic powder, and pink salt.
  4. 4Instead of high-protein cheese you can use another cheese of your choice, though this one gives the dish a lovely protein boost without feeling heavy.
