Savory oat crepes

These savory oat crepes are my go-to lifesaver whenever I want a quick, wholesome dinner without any hassle. I whip them up in 15 minutes using whole oat flour, egg whites, fine herbs, and salt. If the batter feels too thick, I add a splash of milk so it spreads easily in the pan and produces thin, delicate crepes.

I love stuffing them with chicken and cheese: they turn out flavorful and satisfying, just right for a busy weeknight. If you're looking for savory recipes to use up egg whites, this is a simple and delicious way to go. A good non-stick pan makes flipping them effortless without tearing; the quantities here make one serving.

To switch up your weeknight dinners, check out my Avocado and salmon crepes and my Tuna pizza with an oat crust, two more great ideas with different fillings.

Ingredients

Here are the ingredients you'll need for this recipe

  • 30gr whole oat flour
  • 3 egg whites
  • 1 splash of milk (optional)
  • Fine herbs
  • Pink Himalayan salt

For the filling

  • Chicken breast
  • High-protein cheese

Equipment

  • Crepe pan

Step by step

Method

  1. 1In a shaker bottle, blend the oat flour, egg whites, milk, a pinch of salt, and fine herbs until smooth.
  2. 2Pour a thin layer of batter into a non-stick skillet and cook over low heat.
  3. 3Place the filling on one quarter of the crepe, fold it in half, and then fold it in half again into a triangle.
  4. 4Cook briefly on both sides until golden and the cheese melts.
  5. 5All done! Our SAVORY OAT CREPES are ready

Extras

  1. 1The milk is optional, though it does make the crepes softer and easier to fold; if you skip the milk, simply add one more egg white.
  2. 2I used cooked chicken for the filling, but tender greens, a healthy tuna spread, or anything you have on hand will work wonderfully.

Frequently asked questions

Can savory oat crepes be prepared ahead of time?

Yes, you can store the unfilled crepes in an airtight container in the fridge for up to 2 days. I recommend separating them with parchment paper and warming them in a dry skillet before adding your cooked chicken and cheese.

How do I make these oat crepes gluten-free?

Use certified gluten-free oat flour and check the labels on the rest of your ingredients. Regular oats often suffer from cross-contamination with other grains during processing.

Can I replace the high-protein cheese with another cheese?

Yes, mozzarella or any good melting cheese works great. You don't need to tweak the batter at all, though the nutritional profile will change depending on the cheese you pick.
