Ingredients

Here are the ingredients you need for this recipe

  • 125gr 100% whole spelt flour
  • 4gr baker's yeast
  • 1 pinch pink Himalayan salt
  • 85gr warm water
  • 1 tbsp extra virgin olive oil

Topping

  • Chicken burger patties with goat cheese
  • Spring onions
  • Goat cheese
  • High-protein cheese
  • Dried oregano
  • Crushed canned tomatoes
  • Zero-sugar barbecue sauce
  • Quail eggs

Step by step

Method

  1. 1In a mixing bowl, combine the spelt flour with the yeast and salt, stirring well.
  2. 2Next, pour in the warm water and olive oil.
  3. 3Mix everything together until you get a slightly sticky dough.
  4. 4Cover the bowl with plastic wrap and let the dough rest for about 30min.
  5. 5Once rested, turn the dough out onto a lightly floured surface dusted with a little spelt flour.
  6. 6Knead for about 5min, then place it onto a sheet of parchment paper.
  7. 7Now roll out the dough and give it your desired pizza shape.
  8. 8Once rolled out, preheat the oven to 200ºC and let the dough rest a few minutes more in the meantime.
  9. 9After 10min, place the crust in the oven for a couple of minutes to blind-bake (if any bubbles puff up, gently poke them with a fork).
  10. 10Remove from the oven and spread the toppings over the base.
  11. 11Layer on the tomato, oregano, cheese, spring onion, chicken patties, goat cheese, and barbecue sauce.
  12. 12Bake for about 10min at 250ºC (or until you see the crust is cooked and golden).
  13. 13Carefully crack the quail eggs on top and return to the oven for 2min more.
  14. 14Done! Our spelt pizza with chicken and goat cheese is ready.

Extras

  1. 1The toppings are completely adaptable, so feel free to use whatever you like best.
  2. 2You can use either fresh or active dried baker's yeast here.
  3. 3If you let the dough rest for another 30min after kneading in step 6, the crust turns out even better.
  4. 4If you're particularly hungry, double the dough ingredients to make a family-sized pizza or two medium ones. As written, it makes one medium-to-large pizza, which might not be enough depending on appetites.
