Ingredients

Here are the ingredients you need

  • 2 large avocados
  • 2 cans tuna in extra virgin olive oil
  • 1 carrot
  • 10g cooked sweetcorn
  • 20g cooked peas
  • Lime juice

For the egg-free mayonnaise

  • 250ml mild olive oil or vegetable oil
  • 2 tsp lemon juice
  • 1/2 tsp pink salt
  • 125ml unsweetened soy milk

Step by step

Method

  1. 1Peel and finely dice the carrot, then drop it into a small pot of boiling water.
  2. 2Blanch for 2 minutes, then transfer to a colander and rinse under cold water. Drain well and place into a mixing bowl.
  3. 3Add the sweetcorn, peas, and tuna to the bowl.
  4. 4Scoop out the avocados, chop the flesh into cubes, and toss with a squeeze of lime juice so it doesn't brown.
  5. 5Add the avocado to the bowl and gently toss with the rest of the ingredients.
  6. 6Spoon the mixture back into the avocado shells.
  7. 7Make the egg-free mayo by placing all mayo ingredients into the cup of an immersion blender; keep the blender steady on the bottom and blend until it emulsifies into a thick, creamy sauce.
  8. 8Spoon the mayonnaise generously over the stuffed avocados.
  9. 9All done! Now we can dive into our STUFFED AVOCADOS WITH TUNA AND EGG-FREE MAYO.
