Today we're preparing a sugar-free malabi, a creamy dessert made with oat milk and rose water that wins us over with its delicate aroma. We serve it in little glasses with homemade berry syrup and chopped pistachios, a combination of textures and flavors that is perfect for savoring spoonful by spoonful and making ahead of time.

Ingredients

Here are the ingredients you need

  • 500ml unsweetened oat milk
  • 35g cornstarch
  • 1 tablespoon rose water
  • Erythritol sweetener
  • Homemade berry syrup
  • Pistachios

Step by step

Method

  1. 1In a small saucepan, bring the oat milk to a boil, setting aside one glass.
  2. 2In the reserved glass of milk, add the cornstarch, sweetener, and rose water, stirring well until there are no lumps.
  3. 3Once the milk in the saucepan comes to a boil, turn off the heat and pour in the reserved mixture, stirring constantly until it thickens.
  4. 4Divide the mixture into small glasses and let cool slightly, then transfer to the fridge for at least 4 hours.
  5. 5Meanwhile, make the syrup in another small saucepan by adding mixed berries and a splash of water.
  6. 6Let it simmer until it reduces.
  7. 7Spoon the syrup over the top along with some chopped pistachios.
  8. 8All done! Now we can enjoy our SUGAR-FREE MALABI
