Ingredients

Here are the ingredients you'll need

  • 3 garlic cloves
  • 2 medium eggplants
  • 5-6 medium ripe tomatoes
  • 1 handful of pitted black olives
  • 2 tablespoons ground cumin
  • Black pepper
  • Pink salt
  • 1 teaspoon sweet paprika
  • Juice of 1 lemon
  • Tabasco sauce, to taste
  • Extra virgin olive oil

Step by step

Method

  1. 1Peel one of the two eggplants and dice both into small cubes, then boil them for 20min.
  2. 2Once cooked, transfer to a colander and drain thoroughly, pressing down with a spoon to remove excess water; set aside.
  3. 3In a skillet with a generous splash of extra virgin olive oil, gently sauté the finely minced garlic until golden.
  4. 4As soon as the garlic begins to turn golden, add the diced tomatoes.
  5. 5Next, add the sliced olives and cook for 10min.
  6. 6Stir in the drained eggplant, lemon juice, and spices.
  7. 7Mix everything well and let it simmer over medium heat for 5min.
