Today I'm making a brie pizza, the kind we always want to share and make again at home. The combination of sweet caramelized onions with creamy cheese is delicious on a homemade spelt crust. I mix strong spelt flour and whole spelt flour for the base, then top it with tomato sauce, low-fat cheese, and brie.

I like to finish this caramelized onion pizza with a sprig of rosemary, which adds a lovely aroma without complicating the recipe. It's a great idea for dinner for two, ideally on a day when you have a bit of time to dedicate to the dough and can enjoy it straight out of the oven, with the cheese melted and bubbling.

Ingredients

Here are the ingredients you'll need

  • 125g strong spelt flour
  • 125g whole grain spelt flour
  • 1 cube fresh yeast (15g)
  • 1 tsp Himalayan pink salt
  • 10ml extra virgin olive oil
  • 160ml lukewarm water

Toppings

  • Healthy tomato sauce
  • Low-fat cheese
  • Healthy caramelized onions
  • Brie cheese
  • Fresh rosemary

Equipment

  • Stand mixer or food processor

Step by step

Method

  1. 1Add all the dough ingredients to your food processor and knead for 6 minutes on speed 3 (if you don't have one, knead by hand).
  2. 2Let it rise in the fridge for at least 50 minutes.
  3. 3Meanwhile, thinly slice the onion and place it in a skillet with a splash of olive oil and salt over low heat. Cover with a lid and let it soften gently. Stir in the date paste and set aside.
  4. 4Once the dough has risen, knead it gently and shape it into a flat rectangle (let it rise again for 30 minutes, or you can skip this step).
  5. 5Transfer it onto a sheet of baking paper on a baking tray for its initial bake.
  6. 6Bake at 180ºC for 10 minutes.
  7. 7Remove from the oven and add the toppings (tomato sauce, cheese, caramelized onions, and brie).
  8. 8Return to the oven until the cheese starts to melt.
  9. 9Serve with fresh rosemary scattered over the top.
  10. 10Done! Now we can dig into our CARAMELIZED ONION AND BRIE PIZZA.

Frequently asked questions

Can I swap the brie for goat cheese?

Yes, you can substitute it with a log of goat cheese, which pairs wonderfully with caramelized onions. Keep in mind that the flavor will be sharper and more intense than with brie.

How do I store leftover pizza?

Store any leftovers in an airtight container in the fridge within two hours of baking, and enjoy them within 2-3 days. To revive the crust without it getting soggy, reheat slices in the oven rather than the microwave.

Can this baked pizza be frozen?

Yes, you can freeze individual slices once cooled, wrapped well and placed in a freezer-safe bag or container. Thaw them in the fridge and give them a quick blast in the oven to heat through and melt the cheese again.
