Ingredients
Here are the ingredients you need for this recipe
- 180gr protein cheese
- 1 red onion
- 1 handful of fresh parsley
- Garlic powder
- Goat cheese
- 1 egg
- 1 pack of filo pastry
Step by step
Method
- 1Preheat the oven to 200ºC.
- 2In a bowl, combine the protein cheese with the very thinly sliced onion and fresh parsley.
- 3Season to taste with garlic powder.
- 4Mix everything well and set aside.
- 5In an oven-safe baking dish, build the base by laying down a sheet of filo pastry, brush lightly with water, lay another sheet on top slightly turned so the corners don't overlap, and repeat for a total of 4 layers.
- 6Pour in the filling and scatter the goat cheese cut into small chunks over the top.
- 7Cover with a sheet of filo pastry as a lid and fold over the pastry edges from the base to seal, brushing lightly with water.
- 8Bake for 20min at 180ºC.
- 9Beat an egg and brush it over the top.
- 10Bake for 2 more minutes.
- 11All done! Our high-protein cheese, red onion, parsley, and goat cheese pie is ready to serve.
Extra tips
- 1You can season with any herbs or spices you like.
- 2Feel free to swap the red onion for yellow or sweet onions.
- 3I used filo pastry because it's so light and delicate, but you can experiment with other types of pastry if you prefer.
- 4I don't add salt because I love the natural sweetness of the onion paired with the cheese.
