White pizza with cream cheese, pear, bacon, and Camembert

Today I'm treating myself to a homemade pizza with cream cheese, pear, bacon, and Camembert. It's a combination we love at home because of the contrast between the sweet fruit and the salty touch of the bacon. I make a simple dough with strong bread flour and top it with cream cheese instead of tomato sauce: that's the base of this white pizza.

The cream cheese spreads easily and creates a wonderfully creamy base, while the Conference pear pairs beautifully with the Camembert. I finish it off with walnuts and a drizzle of honey. If you love sweet-and-savory contrasts, it's a great dinner to share between two and enjoy at a relaxed pace, taking your time to prepare the dough.

If you enjoy these flavor combinations, I recommend my Whole spelt pizza with pears and goat cheese and my White pizza with zucchini and goat cheese.

Ingredients

Here are the ingredients you need for the dough

  • 160g strong white bread flour
  • 7g dried baker's yeast
  • 1 teaspoon pink Himalayan salt
  • 20ml extra virgin olive oil
  • 120ml warm water

Here are the ingredients you need for the topping

  • Low-fat cream cheese
  • Grated low-fat cheese
  • 1 Conference pear
  • Bacon
  • Camembert cheese
  • Walnuts
  • Honey

Step by step

Method

  1. 1Add all the dough ingredients into the kitchen robot or stand mixer and knead for 6 min on speed 3 (if you don't have a mixer, knead by hand).
  2. 2Cover and let rise for 30/40 min.
  3. 3Transfer the dough to the counter, degas it by gently kneading and shaping it into a ball, place it onto a sheet of parchment paper, and shape it using your hands.
  4. 4Add the toppings: spread cream cheese over the base just like tomato sauce, then add grated cheese, sliced pear, bacon, Camembert, walnuts, and honey.
  5. 5Bake at 250ºC for about 10-12 min.
  6. 6Done! Our WHITE PIZZA WITH CREAM CHEESE, PEARS, BACON, AND CAMEMBERT is ready.

Extras

  1. 1You can par-bake the dough slightly before adding the toppings.
  2. 2Bake for the first 5 minutes on the bottom floor of the oven so it cooks like in a wood-fired oven, then move it to the middle rack to finish baking.
  3. 3If you don't let it rise because you're in a hurry, no problem at all—it will simply turn out a little less fluffy.

Frequently asked questions

Can I use another type of cream cheese for the pizza?

Yes, you can substitute the spreadable cheese for another plain cream cheese with no added flavors. I would spread it in a thin layer so it pairs nicely with the pear and Camembert without feeling overly heavy.

Do you need to peel the pear before putting it on the pizza?

It's not strictly necessary: you can leave the skin on as long as you wash it well. Slice it thinly so it softens nicely in the oven, and choose a pear that is ripe yet firm, so it doesn't release too much liquid.

Can this cream cheese pizza be frozen?

Yes, you can freeze it once baked and completely cooled, tightly wrapped in portions, although the pear and cheeses may change texture slightly. To revive the crust, reheat it in the oven; if you plan to freeze it, it's best to leave the walnuts and honey off until serving.
