Carrot and Broccoli Bread

Bread
Be the first to rate it!

We love this broccoli and carrot bread because it's so easy to make and the Herbes de Provence give it such a lovely aroma. I make it with vegetables, almond flour, and eggs: just mix everything together and let the oven do all the work. It takes 15 minutes of prep and 20 minutes of baking to get four generous portions that you can slice and serve however you like.

If you're looking for a wheat-free broccoli bread, this combination is a wonderful, simple alternative. The eggs help bind the vegetables and the almond flour gives the crumb great texture. I love serving it cut into squares, either on its own or with our favourite toppings, alongside a meal or as a quick savoury snack.

If you fancy trying other easy breads, I recommend my Skillet bread and my Microwave oat bread.

Frequently asked questions

How should I store this broccoli and carrot bread?

Once it has cooled completely, store it in an airtight container in the fridge and eat within 3 days. Because it contains fresh vegetables and eggs, I wouldn't leave it at room temperature like traditional bread.

Can I freeze it in portions?

Yes, let it cool and freeze it in individual slices so you can take out just what you need. Thaw it in the fridge, and if you fancy having it warm, pop it in the oven for a few minutes.

Is this vegetable bread gluten-free?

The recipe doesn't call for any gluten-containing ingredients, as it's made with almond flour. If you're preparing it for someone with coeliac disease, make sure to check the labels on the almond flour, herbs, and onion powder, and take care to avoid cross-contamination.
