Ingredients
Here are the ingredients you need for this recipe
- 2 Tablespoons chia seeds
- 2 Fat-free plain yogurts (0%)
- Mango
- 2 Squares dark chocolate (no added sugar)
For the topping
- 1 Homemade oat cookie (optional)
Step by step
Method
- 1In an airtight container, add the chia seeds and yogurt.
- 2Cover and refrigerate overnight.
- 3The next day, our chia pudding is ready to assemble.
- 4Peel and chop the mango.
- 5Purée part of the mango to make a quick sauce and set the rest aside.
- 6Place the chocolate squares in a small cup, microwave for 20-30 seconds, and remove.
- 7Start assembling your glass, layering to your liking.
- 8Melted chocolate, mango, chia pudding, mango, chocolate, chia pudding, and keep going until the glass is full.
- 9Drizzle a little chocolate on top to decorate.
- 10I topped mine with a homemade avocado oat cookie, but that's completely optional.
Notes
- 1Chia pudding is best made overnight, but if you're short on time you can prepare it a couple of hours ahead.
- 2This pudding is made with yogurt, but you can also use whichever milk you prefer.
- 3I didn't add any sweetener because I like the natural taste of plain yogurt, but feel free to sweeten it a bit to your taste.
