Today we're making fluffy oat and spinach pancakes, a simple recipe made with whole oat flour and fresh spinach. We cook them covered over low heat so they turn out thick and pillowy, and then layer them with our favourite toppings. Let's enjoy a savoury combination that you can easily adapt to your liking!

Ingredients

Here are the ingredients you need for this recipe

  • 40gr whole oat flour
  • 4 egg whites
  • 1 egg
  • 1 handful fresh spinach

Topping

  • 0% fat whipped fresh cheese (or smooth quark)
  • Deli chicken slices
  • Diced cured ham

Step by step

Method

  1. 1Put the ingredients in the blender jar and blend well.
  2. 2Next, place a non-stick frying pan (preferably a small one so they turn out nice and thick) over the heat.
  3. 3Pour in some batter and cover with a lid so they cook through.
  4. 4Repeat the process until all the batter is used up.
  5. 5Finally, assemble layer by layer with our whipped fresh cheese and sliced chicken topping.
  6. 6Finish by scattering a few ham cubes over the top.
  7. 7Done! Our fluffy oat and spinach pancakes are ready to enjoy.

Extras

  1. 1The topping is completely optional; you can add whatever filling you like best.
  2. 2If you use unflavoured oat flour, you might want to add some sweetener so they don't turn out bland.
  3. 3Cover them while cooking so they rise, and don't forget to cook them on low heat.
