Today we are making a Galette Bretonne “my way”, a savoury recipe with wholegrain spelt flour and smoked high-protein cheese that comes together easily in a pan. We give it that homemade touch we love so much with a colourful filling and an egg right in the centre, folding the edges over to get its classic square shape.

Prep: 10 minCook: 15 minServes: 1

Ingredients

For the galette

  • 30g wholegrain spelt flour
  • 3 egg whites
  • 1 pinch of pink Himalayan salt
  • 1 splash of unsweetened plant-based milk

For the filling

  • 50g smoked high-protein cheese
  • Red bell pepper
  • Wild asparagus tips
  • Black olives
  • 1 egg
  • Fresh thyme

Step by step

Method

  1. 1Using an immersion blender, blend together the flour, egg whites, salt, and plant-based milk.
  2. 2Pour into a large non-stick frying pan to make a crepe, then set aside.
  3. 3Grate the cheese and add it to the crepe along with the rest of the ingredients: asparagus and peppers (I use them raw, but you can cook them beforehand if you prefer), olives, and the egg.
  4. 4Fold the sides inward to create a square shape.
  5. 5Cook over very low heat with a lid on the pan until the egg is cooked through.
  6. 6All done! Our Galette Bretonne “my way” is ready.
