Healthy tequeños

Today I'm making healthy baked tequeños with a homemade precooked cornmeal dough and a high-protein cheese filling we love. You can make the dough by hand or in a food processor. To make sure the cheese stays sealed inside, I wrap them carefully and pinch the seams shut—it's definitely worth taking a little extra time on that step.

If you're wondering whether tequeños can be healthy, it comes down to the ingredients and portion size, not just baking them instead of frying. Here I bake them without frying, making them ideal to share as an appetizer or for a casual tapas-style dinner. I love serving them freshly baked; if you want an easier dough to work with, you can use whole wheat flour.

To keep the homemade snack spread going, I recommend my Ham and cheese pizza rolls and my Tuna and egg empanada, two great sharing options.

Frequently asked questions

Can I make these tequeños gluten-free?

Yes, by using certified gluten-free precooked cornmeal and checking the labels on your yeast and other ingredients. Do not use the whole wheat flour alternative, and take care to avoid cross-contamination with kitchen tools or surfaces.

How can I adapt the recipe to make vegan tequeños?

Swapping the cheese is not enough, since this dough also contains egg. You would need a good melting plant-based cheese and an egg replacer for the dough; this has not been tested in this recipe and may alter the texture.

Can the tequeños be frozen before baking?

Yes, you can freeze them once shaped and tightly sealed. Freeze them spaced apart on a baking sheet first, then transfer them to an airtight bag or container. Bake straight from frozen without thawing, keeping an eye on them as they may need slightly more time than fresh ones.
