Ingredients

Here are the ingredients you need for this recipe

  • 1 red potato
  • 1 white onion
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 160g canned tuna in spring water
  • 2 garlic cloves
  • Pink Himalayan salt
  • Black pepper
  • A splash of unsweetened plant-based milk
  • Smoked Eatlean protein cheese

Notes

  • You can boil the potato instead of microwaving it, just make sure to drain it thoroughly afterwards.
  • Feel free to season with any herbs or spices you like.
  • You can use regular Eatlean cheese or any other low-fat cheese.
  • If you prefer not to use cheese, simply leave it out.

Step by step

Method

  1. 1Peel the onion, dice it finely, and gently cook it in a frying pan until soft and translucent.
  2. 2Meanwhile, peel the potato, cut it into chunks, and microwave for 5 minutes until tender.
  3. 3Once the onion is softened, add the diced peppers and finely minced garlic, cooking until tender.
  4. 4Transfer the cooked potato to a food processor along with a splash of plant-based milk, pink Himalayan salt, and pepper to taste, blending until smooth and creamy.
  5. 5Preheat the oven to 180ºC.

Tips and tricks

Once the peppers are cooked through, add the thoroughly drained and flaked tuna, stir everything together well, and remove from the heat.

Assemble the dish by spreading the vegetable and tuna mixture over the bottom, topping with a layer of mashed potato, and grating a little Eatlean protein cheese over the top.

Bake until the cheese is melted and starts to take on some colour.

And that's it! Our healthy potato and tuna bake is ready to enjoy.
