Today I'm making Iberian-style broken eggs with potatoes, the kind of dish you just want to bring straight to the middle of the table and share. This recipe serves two and comes together in about 35 minutes: an easy go-to for lunch or dinner when you're craving something comforting and full of flavor.
I cook the potatoes in the air fryer or oven and pair them with griddled eggs. I like to keep the yolks nice and runny so that when you break them, they coat the potatoes and pork loin. I finish with a bit of crumbled feta cheese for contrast; with the deep flavor of good Iberian lomo, you really don't need much else.
If you enjoy dishes meant for sharing, I recommend my eggs with ham and sweet potato and my ham and cured pork loin tortipizza.
