Ingredients

Ingredients you'll need for this recipe

  • 1 red potato
  • 1 small zucchini
  • 100g low-fat smoked cheese
  • Garlic powder
  • Pink Himalayan salt

Step by step

Method

  1. 1Preheat the oven to 180ºC.
  2. 2Peel the potato and cook it in the microwave for 4 to 7 minutes (depending on the potato and your microwave's power).
  3. 3Meanwhile, grate the zucchini and finely chop the high-protein cheese.
  4. 4Once the potato is tender, place it in a bowl and mash it with a fork.
  5. 5Add the grated zucchini and season to taste with pink salt and garlic powder.
  6. 6Mix everything well so the flavours come together, then fold in the cheese and mix again.
  7. 7Using your hands, shape the mixture into little patties and place them on a baking tray.
  8. 8Bake for about 20 minutes at 180ºC.
  9. 9And that's it! Your potato and zucchini bites are ready to enjoy.

Notes and variations

  1. 1You can boil the potato instead of microwaving it; just make sure to drain it very well afterwards.
  2. 2Feel free to season with any other herbs or spices you like.
  3. 3You can use regular cheese instead of low-fat.
  4. 4If you prefer not to use cheese, add an egg to bind the mixture.
