Today we are making a whole spelt three-cheese pizza, the kind you cannot wait to share straight out of the oven. Made with whole spelt flour and goat cheese, it brings together a wholesome homemade crust and a deeply flavourful topping, finished with a subtle drizzle of date syrup.

Prep: 85 minCook: 20 minServes: 2

Ingredients

For the dough

  • 225 g whole spelt flour
  • 175ml water
  • 1/2 packet baker's yeast
  • 1/2 tablespoon extra virgin olive oil
  • 2 teaspoons pink Himalayan salt

For the topping

  • Homemade tomato sauce
  • 100g protein cheese
  • 1 small piece Roquefort or blue cheese
  • 75g goat cheese
  • Cherry tomatoes
  • Homemade date syrup

Step by step

Method

  1. 1Mix the ingredients together.
  2. 2Knead for 10 minutes.
  3. 3Place the dough in a bowl, cover with a clean kitchen towel, and let it rest for 1 hour so it doubles in size.
  4. 4Once risen, knead gently once more and stretch into a pizza base.
  5. 5Add toppings to taste and bake at 180ºC for 20 minutes.

Notes

  1. 1If you make the dough in a kitchen machine, just place all the dough ingredients in the bowl with the kneading blade on speed 3 for 6 minutes.
