Spiced Carrots and Potatoes

These oven-roasted potatoes and carrots are an easy side dish to brighten up everyday meals. I use jarred cooked potatoes, which save time and turn out lovely and golden when baked with carrots, olive oil, curry powder, garlic, and onion powder. The contrast between the sweetness of the carrot and the warm spices is my favourite part.

The potato and carrot combination works just as well as a hearty side dish as it does making the veggies the stars of the plate. The quantities make four servings, and you can easily tweak the spices to your liking. Keep an eye on doneness, though: roasting time will depend on how you slice your carrots and on your oven.

If you enjoy these side dishes, I recommend my Spiced roasted potatoes and Baked potatoes and sweet potato with cheese for delicious variations.

Tips and tricks

Tips and tricks for making spiced carrots and potatoes

I use jarred cooked potatoes because they turn out delicious in the oven, but you can use ordinary raw potatoes and adjust the roasting time accordingly.

Feel free to experiment with other spices.

Remember that oven times are approximate and depend on the cut of your vegetables and your oven.

Frequently asked questions

Can I use raw potatoes instead of jarred cooked potatoes?

Yes, you can use raw potatoes, but you will need to extend the baking time. Cut them into similar-sized pieces and check that both the potatoes and carrots are tender before taking them out.

What spices can I use if I don't have curry powder?

You can skip the curry powder and stick with garlic, onion powder, and black pepper. You can also try sweet paprika or ground cumin, adding a small pinch at first to balance the flavour to your taste.

How should I store leftover roasted potatoes and carrots?

Store them in an airtight container in the fridge within two hours of cooking and eat within 3–4 days. To reheat, you can pop them in the oven until piping hot; using the microwave will leave them softer.
