Today I'm making zucchini and tuna croquettes in the air fryer—an easy way to sort out lunch or dinner without spending ages in the kitchen. All you have to do is mix the ingredients, shape them, and let them cook. They're ready in 30 minutes and make four portions, so they're great for sharing at home.

These tuna and zucchini croquettes use egg, grated cheese, and quick oats to bind the mixture, so there's no need to make a béchamel. To help them hold their shape, make sure to drain the tuna thoroughly and squeeze the excess moisture out of the zucchini. Garlic powder, onion powder, and oregano give them plenty of flavor with zero fuss.

Frequently asked questions

How do I store leftover tuna and zucchini croquettes?

Store them cooked in an airtight container in the fridge and eat them within two days. Pop them in the fridge within two hours of cooking and reheat them in the air fryer until they are piping hot all the way through.

Can I make these croquettes gluten-free?

Yes, just use certified gluten-free oats and check the labels on the rest of your ingredients, since regular oats can contain traces of gluten.

What should I do if the mixture is too wet to shape?

Drain the tuna very thoroughly and squeeze out any excess liquid from the grated zucchini before mixing. If the mixture still feels too soft, let it sit for a few minutes so the oats can absorb the moisture, and if you started with four tablespoons, add the fifth one listed in the ingredients.
