Today we're making vegetarian quesadillas with homemade whole spelt tortillas, wild green asparagus, and an irresistible melty cheese filling that we absolutely love. You'll enjoy kneading the dough, layering the fresh vegetables, and crisping each quesadilla in the skillet until golden: a simple recipe that's perfect for a casual lunch or dinner.

Prep: 25 minCook: 20 minServes: 2

Ingredients

Here's what you'll need

  • 175g whole spelt flour
  • 20ml extra virgin olive oil
  • 110ml warm water
  • 1 pinch of Himalayan pink salt

For the filling

  • Wild green asparagus
  • Tomato
  • Cooked sweetcorn
  • Very low-fat lactose-free shredded cheese
  • Lactose-free cheese
  • Pepper
  • Oregano

Step by step

Method

  1. 1Mix the tortilla ingredients together in a bowl.
  2. 2Knead well until the dough is smooth and no longer sticks to your hands.
  3. 3Pinch off small pieces of dough and roll them out thin with a rolling pin.
  4. 4Use a plate as a guide and trim around the edges with a knife to get neat circles.
  5. 5Cook each tortilla on both sides in a hot dry skillet.
  6. 6Once all the tortillas are cooked, we can start filling them.
  7. 7Rinse the asparagus spears, trim the tough ends, and slice them in half lengthwise.
  8. 8Microwave them for about 2 min until just tender.
  9. 9Slice the tomato very thinly.
  10. 10Fill the tortillas: a layer of cheese, tomato, asparagus, more cheese, black pepper, and oregano; assemble others the same way, adding sweetcorn.
  11. 11Place each filled tortilla in a skillet and cook on both sides, pressing down gently until the cheese is beautifully melted.
  12. 12Cut in half and serve warm.
  13. 13And done! Now we can tuck into our VEGETARIAN QUESADILLAS
