Ingredients

Here are the ingredients you need for this recipe

  • 60gr whole spelt flour
  • 8 egg whites
  • 1 whole egg
  • Coconut oil
  • Toppings (optional)
  • 2 plain high-protein yogurts
  • 2 large strawberries
  • 1 banana
  • 100% natural peanut butter
  • Chocolate hazelnut protein crispies

Step by step

Method

  1. 1In a mixing bowl, place the egg whites (separate the whole egg as well, saving the yolk for later).
  2. 2Beat the egg whites until stiff peaks form.
  3. 3Once whipped, gently whisk in the reserved egg yolk.
  4. 4Sift in the whole spelt flour through a fine-mesh strainer.
  5. 5Fold everything together gently using a spatula so the whipped whites don't deflate.
  6. 6Heat a skillet over medium heat and use a paper towel to wipe a tiny bit of coconut oil over the surface so the pancakes don't stick.
  7. 7Cook the batter in batches, flipping each pancake once, until all the batter is used up.
  8. 8Finally, stack your pancakes, spreading a layer of yogurt between each one, and pile on your favorite toppings.
  9. 9All done! Sit back and enjoy your fluffy whole spelt pancakes with high-protein yogurt.

Extras

  1. 1I don't add sweetener to the batter because the fruit and toppings provide plenty of sweetness, but if you like them sweeter, simply add a touch of your favorite sweetener to the whites before whipping them.
