Ingredients

These are the ingredients you need for this recipe

  • 1 zucchini
  • 40g textured soy protein
  • 1 red onion
  • 4 tbsp healthy homemade sofrito
  • Garlic powder

Equipment

  • Mandoline slicer

Step by step

Method

  1. 1Preheat the oven to 200ºC.
  2. 2Wash the zucchini and slice it into thin lengthwise ribbons using the mandoline.
  3. 3Soak the textured soy in hot water so it rehydrates completely.
  4. 4Meanwhile, peel and finely chop the red onion.
  5. 5Sauté the onion gently until soft and translucent.
  6. 6Once nicely softened, add the well-drained textured soy.
  7. 7Season to taste with garlic powder.
  8. 8Stir in the tomato sofrito and cook for a couple of minutes to let the flavors blend.
  9. 9Prepare a baking dish where you will arrange the rolls.
  10. 10Place a spoonful of the filling onto each zucchini ribbon and roll them up snugly.
  11. 11Bake at 180ºC until the zucchini is tender (it took me about 15 minutes).
  12. 12Done! Our Zucchini Rolls Stuffed with Textured Soy are ready to serve.
